La visita guidata inizia proprio qui, dall’acetaia e dalle sue botti centenarie, circa centocinquanta, dove l’Aceto Balsamico Tradizionale di Reggio Emilia DOP invecchia, o come si dice in gergo affina lungamente.

L’acetaia de Il Borgo del Balsamico ospita batterie antichissime del 700 e dell’800 provenienti da nobili famiglie delle province di Modena e Reggio Emilia. Durante la visita guidata scoprirete che ogni botte è diversa dall’altra : acacia, rovere, castagno ginepro, ciliegio, frassino. gelso sono le sette essenze di legno in cui l’Aceto Balsamico Tradizionale riposa. Ogni legno conferisce al prodotto un colore, un sapore ed un profumo particolare, che si possono ritrovare nella degustazione finale.

The barrels are divided into batteries, i.e. a sequence of seven barrels (but can also be five or six) ranging from the smallest to the largest. Every year, a small part of the balsamic is topped up from cask to cask, according to the ancient Solera method. After the visit to the vinegar cellar balsamic vinegar tasting beginsThe scent of balsamic vinegar is transformed into taste, all to be savoured. The tasting proceeds in stages, for accustoming the palate to different flavours that balsamic vinegar can tell.

With a teaspoon (never metal), in purity we will let you taste different types of daily products (Balsamic Vinegar of Modena PGI or condiments) and finally an ageing of Traditional Balsamic Vinegar of Reggio Emilia PDO. It is difficult to describe in words: from the youngest and most sour product to the king of all balsamics: traditional has a unique consistency, a very special viscosity and a complex taste. You can smell notes of vanilla, dried fruit, tamarind, plum and cherry, and all the woods in which the balsamic has rested for more than twenty-five years and more. Your palate will be delighted by this unique and precious experience of the senses and the word Balsamic will never have the same meaning for you again. The Balsamic Borgo is happy to organise guided tours of the Ancient Acetaia with tastings of its PDO, PGI balsamic products and condiments. Visits will take place by appointment only.
